Tuesday Ramblings...

I hope everyone is having an amazing Tuesday!

Today it is very nasty in South Georgia. It’s been raining all morning and from the looks of the weather channel it doesn’t look as if it will let up anytime soon! Hell, I think it might rain until Friday! I shouldn’t be complaining about it, because we really need the rain, but my hair, it turns into a frizz ball when it gets wet! I look like a wet poodle. Not cool!

Anyways…yesterday after getting off work I headed home and while waiting on Eric to get home for us to go running I did a few exercises. Crunches, leg lifts, etc. I felt great. So when Eric got home we took off down the dirt road across from our house. From one stop sign to the other it is about 1 ½ miles. Eric of course was showing out and ran the whole way whereas I walked a little J. I was actually very proud of myself and he said so too! I ran a lot, but I don’t really hurt today. Hmm…is that good or bad? When we got back home we got out the gloves and softball and threw the ball for about 30 minutes, or until it got dark. It felt so good to do some physcial activity. I also did more crunches, leg raises, bicycle-- with out a bicycle (this looks SO funny-good thing Eric was asleep, he would have thought I was crazy)! Needless to say I felt great going to bed, and I slept so much better!

Onto more interesting things…like the….BACHELOR!

O.M.G. Someone please get that crazy lady off the show. Michelle is just out.of.her.mind. I really hope that Brad sees this before it’s too late. I’m still loving Emily. She is gorgeous, how can you not? I really hate that she didn’t get a one on one date again, but I guess the other girls needed a chance too.  I can’t wait until the next episode, from the preview at the end last night it seems like it should be VERY good!

I thought I would post this amazing recipe for Chicken & Dumplings for the crock pot. I love using my crock pot as much as I can. It’s always so simple to put whatever in there before leaving for work and by the time I get home it’s ready. This is very simple and amazingly delicious and great for a cold rainy day like today. So without futher adue...

Chicken & Dumplings

4-6 boneless chicken breast
2 (10.75 oz) can of condensed cream of chicken soup
2 tablespoons of butter
1 onion finely diced (I don’t put onion in mind, and it’s still yummy)
2 (10oz) packages of refrigerated biscuit dough, torn into pieces


1. Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water(or chicken broth will work too) to cover.
2. Cover, and cook for 5 to 6 hours on High. About 2 hours  before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center. Stir continuously, the dough will stick to the sides and burn if not careful.

Drinks, OCD, & The Bachelor

Happy Monday!

I hope everyone had a great weekend!

Here is a little re cap of ours:

{Friday}

I worked late as usual on Friday’s. After getting home and changing clothes we headed over to a friend of Eric’s, for supper. We had a yummy dinner that consisted of baked chicken thighs, macaroni & cheese, corn, & green beans. It was very good! I was very thankful I didn’t have to cook since I worked later than usual. After dinner we stayed around for a while and watched Hardcore Pawn…have y’all ever watched it? I would be so scared to work there, some of those people were scary! After it was over we said our goodbyes and then headed home, a whole mile up the road! Haha! Eric & I were both drained and dead tired from school and work so we hit the sack as soon as we got home. And plus, I had to work on Saturday!

{Saturday}

After dragging myself out of the bed, while Eric & Emmie stayed all warm and peacefully asleep, I made the 15 minute drive to work. Wishing the whole way that I was still snuggled up in bed. After a BIG cup of French Vanilla coffee I woke up. I felt great and had a great day at work. I worked till noon and then headed back home. I knew we’d be out late that night so I grabbed Emmie and got back in my big cozy bed and took an amazing 3 hour nap!! Apparently, I haven’t been sleeping good at night, well I know I haven’t. I wake up SEVERAL times a night to use the bathroom, or just look at the clock. I have no idea why! Anyways…after waking up from my nap I felt so refreshed and was ready to do something! Eric & I got dressed and headed over to another friend of his, house. He offered to cook us dinner since we do so much for them (him and his sweet girlfriend). We are always having them over to our house when we grill. It was a very nice Dominican style dinner (he is from the Dominican Republic and came here to play Baseball-he has a very interesting story about his journey here). It was nice to change it up some. After hanging out for a while Eric & I headed to the bar to use up a gift card that we got for Christmas. We enjoyed two hours of just the two of us drinking & chatting away. Well he drank for two hours , I had one or two since I was the driver. Responsible, I know! J Afterwards we headed home where we just snuggled on the couch and chatted some more. I love having a deep conversation with him. Especially about our future! J

{Sunday}

We slept in! Whoo-hoo! This is the only day of the week that we get to sleep in together since he started school and it’s SO nice! When we finally got up, I headed to my moms to take her something that I had monogrammed at a local boutique in the town that I work at (since it’s right across the street from my office, it’s very easy to drop it off and pick it back up when it’s ready). I stayed for a little while and let Emmie see her “Unie” (as she wants to be called, don’t ask! Haha)! My mom adores her. I hate to see when I have children, they will be so spoiled, but that’s ok, right?

After spending some time with her, I headed back home to tackle my house. I have a thing for cleaning. And I have a thing for a clean home. Needless to say I have really bad OCD, but I absolutely LOVE going to bed, and starting a new week knowing that my house is cleaned from top to bottom & organized. Well this afternoon I was on the war path. I’m talking about I was wiping down doors, blinds, baseboards, windows (inside & out), and organized closets! EVERY THING that usually doesn’t get touched! Man it felt so good! I think I actually slept better last night knowing my house was REALLY clean. Even Eric helped. We just turned off the TV and turned my IPOD on loud and went to town. After a quick dinner of grilled deer sausage we called it quits and headed off to bed!

{Monday}
I woke up this morning feeling wonderful! I was ready to go to work, and actually do work. Haha sounds crazy, I know! I have had a great day so far, and I plan to make it even better by heading to the track when I get off. And Eric will be going with me, to push me! Haha Lord knows I need it. I’ve been attempting to do couch to 5K with a friend, but I’m not one to follow a guideline so I think it is best that I run at my own pace. This time last year I was running a mile and it didn’t bother me, but I’ve let myself get comfortable and  I’m at the point where I want to be healthy, eat healthy, and I want my body to be the way it should. Whatever it takes I’m sticking to it this time. I know I have a great support system and I can do this! I need prayers though, as it will be hard for me!

Anyways….The Bachelor comes on tonight and I can’t wait.

This week Eric will be qualifying at the Gun Range. I’m not sure exactly what he has to do, but I do know it is going to be tough. He has to qualify twice within 6 tries (whatever that means), if he fails he is kicked out. Please say an extra prayer for him as he tries his best to do qualify!

Happy Weekend!

Hello Ladies!

Happy Saturday to you! I hope everyone is having a great weekend so far! We are playing it low key today and tomorrow. Which is just fine with me. I love my cuddle time with E & E!

I feel so far behind on blogging that it’s ridiculous! I didn’t realize how much I missed it until I started catching up on the blogs that I follow! I LOVED reading all of your posts from Christmas & New Years! I realize I haven’t posted on that yet, and I haven’t really made up my mind as to if I will or not!

Eric finally made it into the police academy and is on his 4th week starting Monday. He is doing great and LOVES it! They are so strict when it comes to attendance and passing the test. If you fail ONE test you get ONE retake and if you fail the retake you are OUT! He can only miss 5% of the entire program before he is kicked out. It’s 12 weeks long! He is up at 5:30am every morning(and usually I am too, which blows) and at school by 6:30am!! All I can say is I hope our alarm clocks work, and he studies! J He has been doing great and I’m so proud of him!

As for my school, I plan to start this fall. I will be getting my core and taking my time with it. I have until 2013, that is when the Hybrid/Night nursing program starts. I am doing this program because I HAVE to continue to work (as hard as that may seem) while going to school. I can not afford to quit my job or even go part time (which they probably wouldn’t accept). My mom worked the entire time she was in X-ray school so she is my motivation ! I am really excited to start and become something more for myself. I look back and wish I would have finished my college career when I graduated in 2005! WOW that seems like such a long time ago…well I guess it was! Haha

I thought I would share this CUTE bag that I got for Christmas. It was from my Secret Santa at work, which is a little old lady, honestly I was sort of nervous when I found out she was my Secret Santa. I don’t know what I was expecting it to be, but I thought it was such a great gift. She was going to have it monogrammed, but the store(which is called Three Chicks & A Hen—how cute?!?) had stopped taking monograms the day before she got it, but I received a gift card from one of my customers so I just used it to get it monogrammed with a big, hot pink “L”! I loved the way it turned out J





Tonight we plan on grilling with a few friends and hanging out. Nothing big which is just what I’m down for tonight.

Pigeon Forge Trip

So remember how I said we would be taking a vacation to the mountains? Well we had a blast and are planning to go back this year around the same time! This time will be with all of our friends, a couples trip! Here is our trip summary in pictures...

We took a nice vacation to Pigeon Forge, TN the 4th-10th of December and it was much needed. We spent time at 3 different winerys, The Comedy Barn, Ice skating, Snow tubing, Wonder Works and many more places. We had a blast and did not want to come back home, but I missed my sweet Emmie Lou so we made the 13 hour trip around the mountains back home. I can't wait to go back thsi year!!!


I'M BACK!!!!!

Hey everyone!!

I'm finally back to the blogging world! :) I have missed it so much, but this past month has been very busy with the holidays, our vacation, Eric starting school & just plain tiredness! I've spent almost all day catching up on every blog that I follow and hopefully I will continue to keep it up!

With that being said I will leave ya'll with the pictures the Eric, Emmie & I had taken back in December(these are the pictures we gave to our parents for Christmas)...I hope you enjoy!

MIA...

I know...I know... I have been a horrible blogger these days!

I just have so many things going on right now with the holidays and our vacation that is approaching in 2 short days. We are headed to the mountains for a whole week and I've been busy cleaning my house, getting packed, and cleaning my car. I am also planning a Christmas party at our house the week after we get back. For the past two years my friends and I have gotten together and sent out invitations and helped with the party, but this year I am doing it by myself. Please pray for me! I mailed out the invitations today so that's out of the way. We will be playing Chinese Christmas! I am so excited and I hope it turns out great. Anyways I just wanted to let all my followers know that I will probably be MIA for a week or so. I'm not sure that we will have internet access while at our cabin, I am taking my laptop just in case!

A Little Thanksgiving Day Shopping

I hope everyone had a great Thanksgiving. I sure did. We spent Thanksgiving with my family here in our hometown. We had lunch at my granny's and then after sending the guys home...us girls shopped until we dropped. No joke my feet feel like they are about to FALL OFF, but I got some GREAT deals.

(I fell in LOVE with this wreath when I saw it, I actually had another one in the buggy, but ended up getting this one, so glad I did! It was $12)

We still have to get some stockings, I am having the hardest time finding some without spending a arm and a leg, I want them to be monogrammed & go with my 'theme'...any suggestions?

I also got some more ornaments and a tree skirt today! Now all we are missing is our tree!! HA! Usually that is the first thing you put up at Christmas, but this year it will be the last!

We have also decided NOT to go tackle the crowd on Black Friday. We got some great steals today so we are going to pass it up!

So...as I gear myself up for another (short) work day...I can't help but to think about how blessed I am! I have an amazing family who are always there for me. I have an amazing man in my life who would bend over backwards for me. And great friends! Oh..and a sweet sweet puppy! What more could I ask for?
